Lemon Iced Vanilla Cupcake Recipe

I am baking all the time at the moment, its nice to have that back, my only problem is that I keep baking the same thing (mostly the flapjack from my last recipe) so I need to keep thinking up new things to try, in fact this week I have a very exciting bake for my daughters 4th birthday, it is something I have never tried before so I hope it works and I can share it here! But for now a recipe I am loving and has also been made several times over the past few weeks Vanilla Cupcakes with Lemon Icing and Sprinkles!

Ingredients

  • 140g of Butter
  • 140g of Sugar
  • 2 Eggs
  • 1tsp of Vanilla Essence
  • 130g of Flour
  • 10g of Baking Powder
  • 150g of Icing Sugar
  • 3 tbsp of Lemon Juice
  • Cold Water (2-3tbsp)
  • Sprinkles

Method

  1. Preheat the oven to 170c
  2. Cream the butter and sugar together in a bowl
  3. Add the eggs and vanilla essence and whisk until smooth
  4. Gradually add the flour and baking powder whilst folding the mixture together gently
  5. Pour equally into 12 cupcake cases
  6. Bake for 14-16 minutes
  7. Allow to cool
  8. Once cool make the icing by sieving the icing sugar into the bowl
  9. Add the lemon juice and mix
  10. Then add the cold water little by little until you have a thick but smooth icing
  11. Ice the cupcakes and add the sprinkle
  12. Refridgerate for 15 minutes so the icing sets
  13. Enjoy!

These are delicious so I recommend them highly, they also look great for a party or gathering and last for a few days so basically there is no reason not to right?

Vanilla Cupcake Recipe

Every month all of the UK based people at work have a team breakfast where we each bring something and share, it is our little tradition and I love being a part of it. I have not been to the past few months due to personal issues so this month I thought my donation had to be extra special. So what else than cupcakes… they are for breakfast too right? Here is my recipe for Vanilla and Vanilla Cupcakes:

Ingredients

  • 200g of Butter
  • 100g of Sugar
  • 100g of Flour
  • 1tsp of Baking Powder
  • 1/2tsp of Bicarbonate of Soda
  • 2 Eggs
  • 2tbsp of Vanilla Essence
  • 100g of Icing Sugar
  • Chocolate Vermicelli (for decoration)

Method

  1. Preheat your oven to 180C and put your cupcake cases in the tin
  2. Cream together 100g of butter and the sugar
  3. Once smooth sieve in the flour, baking powder and bicarbonate of soda and mix until crumbly
  4. Then add the eggs and 1 tsbp of the vanilla essence and whisk until combined and your mix is smooth
  5. Pour into the cupcakes cases and leave to settle for a few minutes before placing into the oven for 10-12 minutes (you will know when they are ready by lightly pushing the top and the cake will spring back)
  6. Get them out of the oven and allow to cool
  7. Whilst they are cooling you can prepare the frosting
  8. Add the remaining butter and vanilla essence to a bowl
  9. The sieve in the icing sugar and mix until combined
  10. Using an icing bag or palette knife use to decorate the cooled cupcakes
  11. Finally sprinkle over the chocolate vermicelli to decorate!

Note: This recipe makes 12 cupcakes

These Vanilla and Vanilla Cupcakes are simple but still delicious so if you need something to whip up in a flash but still impress, these come highly recommended!

After sharing what I made for my Birthday, I was surprised to notice that I had not ever shared my Vanilla Cupcakes with Chocolate Frosting, simple yes but it is a staple to any recipe book for a baker, so here is how I do it:

Ingredients

  • 175g of Butter
  • 100g of Sugar
  • 100g of Flour
  • ½ tsp of Bicarbonate of Soda
  • 1 tsp of Baking Powder
  • 2 Eggs
  • 50g of Icing Sugar
  • 25g of Cocoa
  • 1 tbsp of Vanilla Essence

Method

  1. Preheat the oven to 180C (Fan) and put your cupcake cases into your tray
  2. Sift the sugar into a bowl and add 100g of the butter and cream until smooth
  3. Then sift in the flour, bicarbonate of soda and baking powder and mix until crumbly
  4. Then add the eggs and vanilla essence and whisk until smooth
  5. Then spoon into your cupcake cases and bake for 10-12 minutes until cooked (the best way to tell is to gently push the cupcake and if it springs back, it is ready)
  6. Once the cupcakes have cooled you can start on the frosting
  7. Sift the icing sugar and cocoa into a bowl and add the remaining butter
  8. Cream together until smooth
  9. You can then use a palette knife or icing bag to decorate your cupcakes!

The recipe for Vanilla Cupcakes with Chocolate Frosting is so reliable and often I will have the ingredients at home without the need to shop so they are perfect if you need to whip something up quickly and not to mention, delicious!

Halloween Cupcake Recipe

We do not really celebrate Halloween in our household, however I did feel obligated to make something a little Halloweeny, so here is my recipe for Halloween Themed Cupcakes:

Ingredients

  • 100g of Plain Flour
  • 100g of Sugar
  • 1tsp of Baking Powder
  • 1/2tsp of Bicarbonate of Soda
  • 200g of Butter
  • 2 Eggs
  • 1tsp of Vanilla Extract
  • 75g of Icing Sugar
  • A few drops of Orange Food Colouring
  • 2 tbsp of Lemon Juice
  • 12 x Halloween Themed Sweets (I used frog Haribos)

Method

  5. Finally add the vanilla essence and combine

These Halloween Themed Cupcakes were really quick and easy but looked really effective and really were Halloweeny! Just the effect desired, this recipe can be easily altered to suit any holiday too!

Note, I make lemon frosting as I think this covers the slight change in taste when you add artificial food colouring to frosting!

Vanilla and Peanut Butter Cupcake Recipe

This week there is a theme, cupcakes and peanut butter. With that there is really not much to explain but instead I would just like to introduce you to another lovely recipe combining both of these things! Here is my recipe for Vanilla Cupcakes with Peanut Butter Frosting:

Ingredients

  • 100g of Plain Flour
  • 100g of Sugar
  • 1tsp of Baking Powder
  • 1/2tsp of Bicarbonate of Soda
  • 175g of Butter
  • 2 Eggs
  • 75g of Icing Sugar
  • 75g of Peanut Butter
  • 12 Mini Peanut Butter Cups

Method

  1. Preheat the oven to 180C
  2. Prepare your bun tin with your paper cake cases for later
  3. Sift the sugar into a bowl and add 100g of the butter then cream together until smooth
  4. In a separate bowl sift the flour, baking powder and bicarbonate of soda together
  5. Then slowly add the dry mixture to the creamed butter mix until crumbly
  6. Add the 2 eggs and whisk until smooth
  7. Pour the mixture evenly into the cake cases
  8. Bake in the oven for 16-18 minutes
  9. Once cooked allow to cool thoroughly
  10. Once cool sift the icing sugar into a bowl
  11. Then add the final 75g of butter and cream until smooth
  12. Add the peanut butter to the mix and stir until combined
  13. Use a pallet knife or icing bag to decorate the top of the cupcakes with the frosting
  14. Then pop a peanut butter cup on the top to finish!

These Vanilla Cupcakes with Peanut Butter Frosting were a lot less sickly than when I used chocolate cupcakes so I would definitely say that these are a firm favourite of mine at the moment, not that with a wedding coming up I should be eating cupcakes! Oops! I will just have to make sure there lots of people around to eat them so I can keep on baking, and having one of course!
