Old School Sponge Cake Recipe

Wow, it has been a while hasn’t it? My youngest is now 17 months old and has begun settling in at nursery, here in Stockholm we aren’t in lockdown, so I have been finding a lot more time to bake and as I have been baking I have also been reminded how much I love it and how much joy it brings me which has also led me to revive the old blog. I have kept most of my recipes on here but have been trying to have a bit of an organise because this blog has been in constant use as my own personal recipe book. So before I blather on for too long, here it is my first recipe in a long time and something I am loving a lot: Old School Sponge Cake Recipe

Ingredients

  • 200g of Butter
  • 200g of White Sugar
  • 3 Eggs
  • 1tbsp of Vanilla Essence
  • 200g of Plain Flour
  • 1tsp of Bicarbonate of Soda
  • 1tsp of Baking Powder
  • 250g of Icing Sugar
  • Lemon Juice
  • Cold Water
  • Sprinkles

Method

  1. Preheat your oven to 170C (fan)
  2. Line a baking tray with baking paper and set aside
  3. Then begin by creaming the butter and sugar together
  4. Add the eggs and vanilla essence and combine
  5. Gradually add the dry ingredients whilst continuing to whisk
  6. Whisk until smooth then pour into the baking tray
  7. Level the mixture and put into the oven for 20-25 minutes until baked through, I use the bounce back test for this
  8. Once baked, remove from the oven and leave to cool
  9. Whilst the cake is cooling you can make the icing
  10. Place the icing sugar into a bowl and add a few tablespoons for lemon juice and water, keep doing this whilst you stir until you have a thick, creamy and most importantly smooth icing
  11. Once the cake is cooled pour the icing on the top and let drizzle down the side, you can encourage this with a spoon if needed
  12. Then sprinkle away

What is the bounce test?

The best way to test if a sponge is cooked is to lightly press the top of it, if it immediately springs back then it is ready to bring out of the oven.

So there you have it, my first recipe in a while and one of our favourites, I actually use milk free butter in all of my baking now so you can also substitute this too if you also have a milk allergic toddler at home!

Vanilla Cupcake Recipe

Every month all of the UK based people at work have a team breakfast where we each bring something and share, it is our little tradition and I love being a part of it. I have not been to the past few months due to personal issues so this month I thought my donation had to be extra special. So what else than cupcakes… they are for breakfast too right? Here is my recipe for Vanilla and Vanilla Cupcakes:

Ingredients

  • 200g of Butter
  • 100g of Sugar
  • 100g of Flour
  • 1tsp of Baking Powder
  • 1/2tsp of Bicarbonate of Soda
  • 2 Eggs
  • 2tbsp of Vanilla Essence
  • 100g of Icing Sugar
  • Chocolate Vermicelli (for decoration)

Method

  1. Preheat your oven to 180C and put your cupcake cases in the tin
  2. Cream together 100g of butter and the sugar
  3. Once smooth sieve in the flour, baking powder and bicarbonate of soda and mix until crumbly
  4. Then add the eggs and 1 tsbp of the vanilla essence and whisk until combined and your mix is smooth
  5. Pour into the cupcakes cases and leave to settle for a few minutes before placing into the oven for 10-12 minutes (you will know when they are ready by lightly pushing the top and the cake will spring back)
  6. Get them out of the oven and allow to cool
  7. Whilst they are cooling you can prepare the frosting
  8. Add the remaining butter and vanilla essence to a bowl
  9. The sieve in the icing sugar and mix until combined
  10. Using an icing bag or palette knife use to decorate the cooled cupcakes
  11. Finally sprinkle over the chocolate vermicelli to decorate!

Note: This recipe makes 12 cupcakes

These Vanilla and Vanilla Cupcakes are simple but still delicious so if you need something to whip up in a flash but still impress, these come highly recommended!

Lemon Cheesecake Recipe

This weeks recipe is sponsored by the the tub of cream cheese in my fridge that I had bought but not used and was coming close to its sell by date, and that means only one thing Cheesecake, but I didn’t really want to go and buy anything else so I decided on a Lemon Cheesecake as I always have lemon juice at home, this is how I made it:

Ingredients

  • 200g of Biscuits (I used Vanilla Shortbread this time)
  • 75g of Butter
  • 300g of Plain Cream Cheese
  • 2 Heaped Tablespoons of Icing Sugar (I didn’t measure this oops)
  • 4 tbsp of Lemon Juice

Method

  1. Start by bashing the biscuits in a bowl, I find it easiest to do this is a food bag first with my rolling pin then tip it into the bowl
  2. Then melt the butter in a pan and add to the biscuits
  3. Using a wooden spoon stir in the butter so all the biscuits are moist
  4. Then transfer into a spring form tin, I used a 13″ one for this
  5. Again using the wooden spoon press the mixture down until it is compact and has a level surface
  6. Pop into the fridge to set
  7. Whilst this is setting mix the cream cheese, icing sugar and lemon juice thoroughly in a bowl
  8. Then pour on top of your biscuit base and even the top
  9. Put back into the fridge and leave until it has set completely

Usually the cheesecakes I make only take a couple of hours to set but this Lemon Cheesecake did need to be left overnight (very sad times as I wanted to eat it right away) but by the next evening it was set as it should be. I think that this is a really refreshing dessert and it feels much lighter to eat than my usual chocolatey desserts. I think this will be the perfect thing to make as the weather gets hotter but you still fancy a treat!

Banana Bread Cake Recipe with Chocolate Frosting Filling

Traditionally (well Hollywood movie traditionally) when a friend has a baby, you turn up with a frozen lasagna or something similar so that they do not have to cook etc. I don’t do that, I take them cake. In fact I take Banana Bread Cake with Chocolate Frosting Filling and this is how I made it:

Ingredients

  • 100g of Sugar
  • 200g of Butter
  • 150g of Flour
  • 1tsp of Baking Powder
  • 1/2tsp of Bicarbonate of Soda
  • 2 Eggs
  • 2 Bananas
  • 1tbsp of Vanilla Extract
  • 75g of Icing Sugar
  • 25g of Cocoa

Method

  1. Preheat the oven to 175C fan and grease your cake tin reading for later
  2. Start of by creaming the sugar and 100g of the butter together in a large bowl
  3. Once smooth sieve in the flour, baking powder and bicarbonate of soda gradually and mix until your mixture is crumbly
  4. Then add the eggs and vanilla extract and combine thoroughly
  5. In a separate bowl mash the bananas with a fork then add to your cake mixture
  6. You can then pour the mixture in your cake tin and bake in the oven for 40/45 minutes. It is best to use a cake tester to check when it is cooked through, by sticking it into the cake and seeing if it comes out clean, when it does, it is ready
  7. Once the cake is ready, remove from the oven and allow to cool
  8. When the cake has cooled you can start on the filling
  9. Add the remaining butter, icing sugar and cocoa to a bowl and mix until combined and smooth
  10. The cut your cake into two through the middle (I find a knife longer than the width of the cake and kneeling until eye level helps you cut it evenly)
  11. Smear the frosting across the base of the cake, leave it thicker in the middle so it can smoodge (is that a word?) to the edges when you pop the top back on and your ready to go!

This Banana Bread Cake with Chocolate Frosting Filling was a great twist on banana bread as you are basically baking it in a different shape and adding chocolate frosting… It couldn’t hurt right?

Chocolate Tray Bake with Vanilla Frosting Recipe

Another slightly archived recipe that I have to share with you is for a Chocolate Tray Bake with Vanilla Frosting. This recipe is really simple and almost foolproof with delicious results and here is how you can make it:

Ingredients

  • 350g of Butter
  • 200g of Sugar
  • 150g of Flour
  • 50g of Cocoa
  • 1 tsp of Bicarbonate of Soda
  • 2 tsp of Baking Powder
  • 4 Eggs
  • 150g of Icing Sugar
  • 3tsp of Vanilla Essence
  • Chocolate Vermicelli

Method

  1. Preheat the oven to 180C (Fan Oven) and line the base of a deep tray with baking paper
  2. In a bowl sift the sugar and 200g of butter and cream until smooth
  3. Then sift in the flour, cocoa, bicarbonate of soda and baking powder and mix until crumbly
  4. Then the eggs and whisk until smooth
  5. Pour into your tray and allow it to settle evenly for a few minutes
  6. Once settled place into your preheated oven for between 25-30 minutes. You can check if the cake is ready by gently touching the top of one, if it springs back then you are good to go!
  7. Get the cake out and allow to cool
  8. Once cool you can prepare the frosting
  9. Place 150g of butter, icing sugar and vanilla essence into a bowl and cream together until smooth
  10. Use this to decorate the top of your tray bake with a palette knife
  11. Finally scatter your chocolate vermicelli over the top
  12. Serve and enjoy!

I think that the Chocolate Tray Bake with Vanilla Frosting would be perfect for making with young ones, or if you would prefer just for yourself! It is rich and yummy and will keep for up to 4 days in a sealed container. Alternatively it is a great recipe to make if you need to bake for a lot of people in one go! Very Mary Berry esque if I do say so myself!

Banana and Oat Muffin Recipe

So like the rest of you it is the start of a new year, I am going to eat better, bla bla bla! Well actually I have sort of been sticking to it and have been investigating some baking that will fit in with this theme. There are not that many healthy and super yummy baking recipes out there but this winning combination is always guaranteed to work. A recipe for Banana and Oat Healthy Muffins:

Ingredients

  • 200g of Flour
  • 80g of Rolled Oasts
  • 50g of Sugar
  • 2tsp of Baking Powder
  • 1tsp of Bicarbonate of Soda
  • 1 Egg
  • 175ml of Milk
  • 75ml of Vegetable Oil
  • 1/2tsp of Vanilla Essence
  • 250g of Mashed Bananas

Method

  1. Preheat your oven to 200C and line a cupcake tin with cases
  2. Put the flour, oats, sugar, baking powder and bicarbonate of soda in a bowl and combine
  3. In another bowl beat the eggs lightly
  4. Then add the milk, oil and vanilla essence and stir
  5. Add the banana and mix thoroughly
  6. Gradually combine the dry ingredients into the banana mix until you all used all of the mix
  7. The pour the mixture into the cases and put into the oven for 18-20 minutes
  8. To make sure they are cooked through you can use a toothpick, if it comes out clean they are ready to go!
  9. Cool and Serve!

If you are trying to eat well but sometimes have to give into that craving then these Banana and Oat Healthy Muffins are just the right thing for you! They are sweet enough to satisfy the urge to snack but they have enough goodness to make them OK. A winning combination when they taste great too!

Vanilla Tray Bake with Lemon Frosting Recipe

A couple of weeks ago I promised my colleagues I would bake something over the weekend for Monday at work. Normally I limit it to Birthdays or special occasions, or I could be doing it everyday. But as it turns out after a relaxing Sunday I actually felt like baking. There was however one small problem… I had no cupcake cases! Generally I am not a fan of baking big cakes as they just never taste quite as good, this time however my hands were tied. So I decided that a tray bake may be more successful and would also go further at work! So looking through the ingredients I had in (not a lot) I went for a Vanilla Tray Bake with Lemon Frosting. Here is my recipe:

Ingredients

  • 350g of Butter
  • 200g of Sugar
  • 200g of Flour
  • 2 tbsp of Vanilla Essence
  • 1 tsp of Bicarbonate of Soda
  • 2 tsp of Baking Powder
  • 4 Eggs
  • 2 tbsp of Lemon Essence
  • 150g of Icing Sugar
  • Hundreds and Thousands

I can actually say that I was really pleased with how well this Vanilla Tray Bake with Lemon Frosting came out. It smelt, looked and tasted great! Possibly my best improvised large cake to date! It is a recipe for every occasion as it onlz takes an hour or so to make and will easily give you 16 good sized portion. You could also be more experimental with the decoration if the feeling takes you!

Marble Cupcake Recipe

In December David turned the big 3-0 so I wanted to make something a little bit special for his birthday and at his request I made Marble Cupcakes for his party and this is how I did it:

Ingredients 

  • 350g of Butter
  • 200g of Sugar
  • 175g of Flour
  • 50g of Cocoa
  • 1 tbsp of Vanilla Essence
  • 1 tsp of Bicarbonate of Soda
  • 2 tsp of Baking Powder
  • 4 Eggs
  • 2 tbsp of Vanilla Essence
  • 125g of Icing Sugar

Method

  1. Preheat the oven to 180C (Fan Oven) and put your cupcake cases (this recipe makes 24 cupcakes) into your baking tray
  2. In one bowl sift 100g of the sugar and 100g of butter and cream until smooth
  3. Then sift in 100g of the flour, ½ tsp of bicarbonate of soda and 1 tsp of baking powder and mix until crumbly
  4. Then add 2 eggs and 1 tbsp of vanilla and whisk until smooth
  5. Set aside
  6. In a second bowl sift 100g of the sugar and 100g of butter and cream until smooth
  7. Then sift in 100g of the flour 25g of cocoa, ½ tsp of bicarbonate of soda and 1 tsp of baking powder and mix until crumbly
  8. Then add 2 eggs and whisk until smooth
  9. Now add one dollop (around one tablespoon) of the vanilla mixture to each cupcake case
  10. Then add around the same amount of the chocolate mixture to each cupcake case
  11. Repeat this process until all of the mixture is used and each case (of 24) has roughly the same amount of cake batter in it
  12. Then you take a toothpick and place into the centre of the case swirling gently out to the edge (do not swirl it too much or you will just mix the batters together)
  13. Repeat this process for each cupcake
  14. Once complete place into your preheated oven for between 10-12 minutes. You can check if the cupcakes are good by gently touching the top of one, if it springs back then you are good to go!
  15. Get the cupcakes out and allow to cool
  16. Once cool you can prepare the frosting, I made half vanilla and half chocolate for them
  17. Place 75g of butter and 75g of icing sugar into a bowl with 1 tbsp of vanilla essence and cream together until smooth
  18. Use this to decorate 12 of your cupcakes
  19. Then place 75g of butter, 50g of icing sugar and 25g of cocoa into a bowl and cream together until smooth
  20. Use this to decorate the remaining cupcakes
  21. Alternatively, you could gently swirl the two frostings together gently and also decorate them in this style (regretting only just thinking of this)
  22. Then enjoy!

But the beauty of Marble Cupcakes is, that they aren’t hard to make and you just cannot go wrong as the pattern is abstract so who cal tell if you did go wrong? They are also taste yummy!

I think I will be trying this recipe with different flavour combinations and possibly just different colour combinations in the future… so watch this space!

Vanilla Cake Pops with Lemon Icing Recipe

As you know I got a Cake Pop Maker for my birthday and I could not wait to try it out, we had cake pops for the kids at our wedding and they just looked so perfect that I already doubted how my own would live up to them but here is how I make my Vanilla Cake Pops with Lemon Frosting:

Ingredients

  • 100g of Butter
  • 100g of Sugar
  • 100g of Flour
  • 1 tbsp of Vanilla Essence
  • ½ tsp of Bicarbonate of Soda
  • 1 tsp of Baking Powder
  • 2 Eggs
  • 100g of Icing Sugar
  • Few drops of Lemon Juice
  • Few drops of Water
  • Hundreds and Thousands

Method

  1. Turn on your cake pop maker so it can preheat
  2. Sift the sugar into a bowl and add the butter and cream until smooth
  3. Then sift in the flour, bicarbonate of soda and baking powder and mix until crumbly
  4. Then add the eggs and vanilla and whisk until smooth
  5. The cake pop maker will be hot by now (follow the instructions specific to your model)
  6. Open it and brush a light layer of butter onto each mould before spooning your mixer into them, I did this to the top of the bottom mould as I thought this got the best result of a full pop
  7. Close the lid and cook for 3-4 minutes
  8. Once ready open and carefully remove from the mould onto a cooling rack
  9. Repeat this process until you have used alll of your mixture, I found this got around 30 pops
  10. Once your pops are cool you can make your icing by mixing the icing sugar and lemon juice together and gradually adding water until you have a smooth and thick mixture
  11. The pick up a pop and dip into the icing then directly into the hundreds and thousands
  12. Balance carefully on your cooling rack until they have set
  13. You can then eat and enjoy!

I could not have been more thrilled with the final results of these Vanilla Cake Pops with Lemon Frosting. They simply looked amazing and tasted so good too. probably too good! These little mouthfuls get eaten soooo quickly so if you are trying to be good this New Years just do not even consider this recipe. That is a warning!

However for the price of the machines, I would really recommend these as an investment as they are really simple, I think it would be a great task to get the kids involved with, probably not when using the machine as it gets really really hot but the decorating and eating of course!

Ingredients

  • 175g of Butter
  • 100g of Sugar
  • 75g of Flour
  • 25g of Cocoa
  • ½ tsp of Bicarbonate of Soda
  • 1 tsp of Baking Powder
  • 2 Eggs
  • 75g of Icing Sugar
  • 1 tbsp of Vanilla Essence

Method

  7. Sift the icing sugar into a bowl and add the remaining butter
  8. Cream together until smooth before adding the vanilla essence and giving it a final and thorough mix
  9. You can then use a palette knife or icing bag to decorate your cupcakes!

My Chocolate Cupcakes with Vanilla Frosting Recipe is another that I see as a staple as I often use it for the base of other ideas. I think once you have these down to perfection you can go anywhere with your cupcake making. And that is our ultimate goal… The perfect cupcake!
